Tomato Soup & Cheese Sandwich

One of my absolutely favorites is tomato soup.  It is definitely one of my comfort foods, and I love eating soup in the cooler (& cold) months of the year.  When I’m feeling cold, it helps warm me up. When I was a child (especially when I was sick), I would take Campbell’s Tomato Soup and add Italian seasonings to it such as basil,  oregano, garlic, and crushed red pepper flakes. As I have become older, I read ingredient listings consistently due to allergies. Through that, I see a bunch of unnecessary ingredients that canned or prepackaged products have in them.  Since I’m an adult, I love making soups from scratch and from organic ingredients. When wanting something light to eat, soup is always a wonderful option.

makes 4 servings if serve 7 ounces

1 can of Muir Glen organic diced tomatoes (with Italian Herbs), 14.5 ounce can

Filtered water (same amount as above ingredient)

Then run the two ingredients in a blender until there are no chunks & pour in a sauce pan on medium heat

1 tsp salt (use fine Pink Himalayan salt if you have, this is better for you than what you buy at a grocery store, plain table salt is not what we should be using.  More about that in a different post)

1-2 TBSP extra virgin olive oil

1/2 tsp garlic powder or 1 small clove garlic (run through garlic press or chopped up fine)

1/2 tsp dried basil, (if use fresh, use 1/2 TBSP)

1/2 tsp dried oregano, (if use fresh, use 1/2 TBSP)

1/4 tsp black pepper

1/4 tsp red crushed pepper flakes

1/4 tsp cayenne


Or you can opt for Italian Season mix, suggestion is to add 2 tsp in lieu of ingredients that is stated above.

Cayenne, black pepper, and red crushed pepper flakes are optional if you want a bit of spice; although, black pepper enhances the soup if you decide to at least put that one spice in the soup.

Let it come to a boil. Stir occasionally and stir throughout the time you are adding ingredients.

After you have made this once, then you can tweak it to your liking.  While making the soup, make sure to test taste it to see if it is seasoned like you want it. When serve, you can add more of any of the  above ingredients if your palate desires.

While the soup is coming to a boil, you can make the following if you like.

Another one of my favorites is a cheese sandwich and it complements the tomato soup. Take a slice of your favorite bread and toast it. Once it is toasted, if you wish put a little butter on it (this is optional) and then add enough slices of your favorite cheese on top and put it under the broiler until it melts (or you can do this in a skillet with some oil or butter). Cheese suggestions are Mozzarella or Cheddar.
